Creamy Pumpkin Soup

creamiest pumpkin soup you've ever had.

INGREDIENTS

2 tbsp olive oil

1 brown onion, finely chopped
1 leek, white park only, finely sliced
1 garlic clove, crushed
1/2 tsp ground coriander
1 tsp ground cumin
1/2 tsp freshly grated nutmeg
1kg peeled pumpkin, diced
1 lage potato, peeled and diced
1L chicken or vegetable stock
1/2 cup (125ml) cream

METHOD

1. Heat oil in a large saucepan over low heat then add onion and leek and cook
for 2-3 minutes until soft but not coloured. Add the garlic and spices and
cook for 30 seconds, stirring constantly.

2. Add the pumpkin, potato, and stock to the saucepan and bring to a boil.
Once boiling, turn the head to low, cover and simmer for 30 minutes.
Take off the heat and allow to cook slightly before blending in batches.

3. Once blended return the soup to the pan, stir through the cream and gently reheat.
Season to taste and add extra nutmeg if desired. Serve and enjoy!
